Thirupagam
Thirupagam is a traditional, rich, sweet originating from Tamil Nadu in South India. It is commonly offered as prasatham or divine offering to Lord Murugan, especially during Kanda Sasthi fast and Thai Pusam. This sweet is referred to as a blend of Mysore Pak and Kaju Katli, with the texture of halwa. The sweet dish is prepared with besan flour, ghee, sugar, milk, and cashew powder and is relatively easy to make. All you need is 15 minutes.
Thirupagam Recipe
Serving: 4
Ingredients:
1/4 cup ghee
1/2 cup kadalai maa (besan flour)
1/2 cup powdered cashews
1/2 cup milk, warmed
1/2 cup sugar, or jaggery
A pinch of cardamon
1-2 tbsp ghee
Directions:
On medium heat, melt the ghee on a pan. Add the besan flour and stir until the ghee is absorbed and the raw smell of besan disappears.
Add ground cashews and mix until it's fully incorporated.
Slowly add the milk and stir vigorously to avoid clumps. Once the milk has been incorporated and the mixture thickens to a halwa like consistency, add the sugar.
Lastly add the extra spoon of ghee and pinch of cardamon. Turn off the heat.
Serve slightly warm.
Note: If using as prasatham, do not taste this until prayers are complete.
